Seared Rainbow Trout with Hazelnuts and Wax Beans

Super Simple and Delicious! Fresh trout with tasty wax beans and a delightful Hazelnut crunch. Mouthwatering goodness!

Bake the trout whole in a 350F oven for 10 – 12 minutes. Finely dice the shallot and sweat in butter. Boil the wax beans in plenty of boiling salted water. Drain and add to the shallot. Toss in the toasted hazelnuts and cream. Bring to a boil until the cream coats the beans. Season to taste and serve with the trout. Mexican Corn Cakes with Jalapeno & Lime

Instead of frozen corn, fresh is nice in the summertime.

To keep things on the lighter side, use a cup of reduced fat Mexican cheese blend , but cheddar or Monterey Jack are great choices also. Increase the cheese if you’re in the mood.

Ingredients

  • 16-ounces of frozen corn (about 3 cups). Fresh corn is best.
  • 4 scallions
  • All or part of one jalapeno pepper, minced
  • 1-2 limes
  • 2 large eggs
  • 1/4 cup milk
  • 1 cup shredded Mexican cheese blend, cheddar or Monterey Jack
  • 1 cup self rising flour
  • Oil for cooking
  • Salt to taste

Directions

Dice the dark green and light green parts of the scallions and put them in a large microwave safe bowl along with the corn and the minced jalapeno pepper. Microwave the mixture for 3-4 minutes, stirring once or twice to promote even cooking. Let the mixture cool slightly and then stir in the milk, cheese, self rising flour, salt and eggs. Mix to combine. Heat a large fry pan on the stove with oil. With a large spoon, drop the batter onto the hot pan. Fry until both sides are golden brown and the centers are cooked. Serve with a good squeeze of lime, extra lime wedges, sour cream and any of the suggestions.

Kimchi Queso

Ingredients:

  • 1 1/2 cups chopped Kimchi
  • 2-3 TBSP Korean Red Pepper Powder (depending on how spicy you want it)
  • 5 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 green onion chopped

Directions:

In a medium saucepan, melt cheddar cheese part way (until it’s mostly soft but still lumpy) then add the sour cream. Melt and stir until the mixture is smooth.   • 1 tbsp vanilla extract

  • 1 cup light brown sugar

  • 1 bottle of Fireball whiskey or Cinnamon flavored whiskey
  • 40 watermelon balls
Instructions

1. Soak watermelon balls in Fireball at least one hour, or up to 24 hours.
2. Place a watermelon ball in a shot glass and pour Fireball shot over.

Bacon Donuts

Ingredients
  • 16-24 slices of bacon
  • 1 can of sliced pineapple rings (we need 8 rings)
  • 8 mozzarella string cheese sticks
  • 2-3 large sweet yellow onion, cut into ⅓ inch rings
  • SYD meat rub
Instructions
  1. Peel and cut the large onion into ⅓ inch slices.
  2. Open the can of pineapple slices, drain the juice and set aside 8 slices.
  3. Match the onion rings to the size of the pineapple slices—choose rings that have more of a bowl shape to help hold the string cheese in place.

PBR Beer Cheese Soup

I love beer cheese soup, my first taste was at a restaurant no longer opened called Baby Doe’s Mineshaft in Denver, Colorado. Southern Soul Barbeque in Georgia mixes up their own version and rather than dose it with any of the craft beers, they pour in good old PBR.

¼ lb butter
½ cup minced sweet onion
½ cup minced celery
½ cup minced carrot
1 tsp. salt
1 tsp. white pepper
1/8 tsp. cayenne pepper
½ cup flour
1 cup warm chicken stock
5 cups whole milk
3 cups quality sharp cheddar, shredded

Grilled Salmon with Honey-Soy Marinade

Ingredients 

1 tablespoon packed brown sugar
1 tablespoon butter or margarine, melted
1 tablespoon olive or vegetable oil
1 tablespoon honey
1 tablespoon soy sauce
1 clove garlic, finely chopped
1 large salmon fillet (about 2 lb), cut into 8 pieces

In small bowl, mix all ingredients except salmon.

In shallow glass or plastic dish, place salmon. Pour marinade over salmon. Cover and refrigerate at least 30 minutes but no longer than 1 hour.
